
Ful Medames is a recipe that I learnt from a Nubian Chef whilst in Aswan ,Egypt. It is a popular North African dish which is very wholesome and often served at breakfast but can be eaten as a main meal accompanied with flat breads, humus, tahini and harissa sauce.The beans used are Fava Beans which have a thick skin and deep, creamy center.

If using dried Fava beans soak them overnight in water then rinse when ready to use.
Place in a large heavy pan and cover with water, adding the dried red lentils, one chopped tomato, chopped onion, 1 tablespoon of olive oil and half a teaspoon of cumin powder. Cook on a low heat for about 90 minutes until the beans are soft in the center.
After approximately 90 minutes there will be a thick creamy sauce. Now you can add 1 teaspoon of salt.
Remove a portion and place in a serving bowl, lightly mash the beans. Drizzle with olive oil, sprinkle with chopped spring onion, parsley, lemon juice and a pinch of chili powder. Serve with flat pitta bread. You can also accompany this dish with humus, tahini sauce and a chili harissa sauce.
